Matteo
Matteo Zamboni is an Italian chef shaping modern Italian dining in Australia through craftsmanship, storytelling and a deep respect for tradition.
Born in northern Italy and classically trained in some of the country’s most prestigious kitchens, Matteo Zamboni has built an international career defined by craftsmanship, creativity and a deep understanding of hospitality. After refining his skills at the three Michelin-starred La Pergola and Ristorante Cracco, he expanded his experience globally, cooking for distinguished guests including the Royal Family of Qatar and working alongside renowned chef Seiji Yamamoto in Tokyo.
Now based in Australia, Matteo is recognised as one of the country’s leading Italian chefs. His career includes senior roles at Ormeggio at The Spit, Pilu at Freshwater and Jonah’s before founding Civico 47, a restaurant widely regarded as a benchmark for contemporary Italian dining.
Alongside his work in restaurants, Matteo collaborates with leading global and Australian brands as a creative culinary partner. His projects focus on translating brand identity into meaningful experiences — from campaigns and product launches to content creation and immersive events — using food as a powerful storytelling medium to communicate brand philosophy with authenticity and emotional impact.
His work has been featured in major publications including Gourmet Traveller, Good Food, Broadsheet, Delicious and Qantas Travel Insider, and he has appeared on national television and radio, including SBS. Matteo is an ambassador for the Miracle Babies Foundation, supporting charitable initiatives and community events.

Outside the kitchen, he enjoys surfing, exploring cocktail culture and spending time with his family. Private dining and bespoke chef experiences are offered on a limited basis.
