Matteo
Hailing from a small town in northern Italy, Matteo Zamboni discovered his love for hospitality at an early age, setting the foundation for a lifelong pursuit of culinary excellence. After training in some of Italy’s most prestigious kitchens, including Michelin-starred restaurants such as La Pergola in Rome and Ristorante Cracco in Milan, Matteo expanded his horizons internationally. His journey led him to cook for distinguished guests like the Royal Family of Qatar and to refine his craft under the legendary Seiji Yamamoto in Tokyo, where he gained invaluable insights into Japanese cuisine.

Over a decade ago, Matteo made Australia his home and quickly established himself as one of the nation’s foremost Italian chefs. His career highlights include roles as sous chef at Ormeggio at the Spit, head chef at Pilu at Freshwater, and executive chef at the iconic Jonah’s at Whale Beach, where he achieved significant milestones and earned industry recognition.
Today, Matteo is the executive chef and founder of Civico 47 in Paddington, Sydney, which has rapidly become a reference point for Italian dining in Australia.
Beyond the restaurant, he works as a private chef, culinary consultant, and media collaborator, sharing his knowledge through TV appearances, brand ambassadorships, cooking classes, corporate events, and bespoke private dining experiences.
Matteo’s expertise has attracted collaborations with leading global and Australian brands, as well as features in major publications such as Gourmet Traveller, Good Food, Broadsheet, Delicious, and Qantas Travel Insider. He is also a regular voice on SBS Radio, where he shares his passion for Italian cuisine and hospitality.

A proud ambassador for the Miracle Babies Foundation, Matteo contributes his time and skills to charity events and community initiatives. Outside of the kitchen, he enjoys surfing, experimenting with cocktails, and spending time with his family.
